Goodmorning everyone! Is there a way to weld or fix more securely the cables coming from potentiometers and switches on the pins of the Arduino board? (the photo is just to understand what I'm talking about) I have to put everything (udoo, potentiometers and switches) inside a box and I'm afraid that by taking a knock some pins can move and no longer make contact ... Thanks in advance!

A simple piece of veroboard maybe: solder males pin above it for attach to the udoo, solder your wires below the board using holes . that could make a nice pluggable solution. i think to something like "diy pi cobbler": https://www.instructables.com/id/Home-Made-Raspberry-Pi-Cobbler/
